Ingredients
- 1 can (14 oz) coconut milk
- 2 cups vegetable or chicken broth
- 1 cup mushrooms, sliced (shiitake or button)
- 1 stalk lemongrass, chopped
- 1-2 kaffir lime leaves (optional)
- 1-2 Thai bird chilies, sliced (adjust to taste)
- 1 tablespoon fish sauce (or soy sauce for vegetarian)
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- Simmer the Base: In a pot, combine coconut milk, broth, lemongrass, and kaffir lime leaves. Bring to a gentle simmer.
- Add Mushrooms and Spice: Add sliced mushrooms and chilies. Cook for about 5-7 minutes until mushrooms are tender.
- Season: Stir in fish sauce and lime juice. Taste and adjust seasoning as needed.
- Serve: Remove lemongrass and lime leaves before serving. Garnish with fresh cilantro.
