- 1 medium green papaya, peeled and shredded
- 2-3 cloves garlic, minced
- 2-3 Thai bird's eye chilies, minced (adjust to taste)
- 2 tablespoons palm sugar or brown sugar
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon tamarind paste
- 1 cup cherry tomatoes, halved
- 1/4 cup roasted peanuts, roughly chopped
- 2 tablespoons dried shrimp (optional)
- 2 tablespoons chopped cilantro
- 2 tablespoons chopped green onions
Instructions:
- In a large mixing bowl, combine the minced garlic, minced chilies, palm sugar, fish sauce, lime juice, and tamarind paste. Stir until the sugar is dissolved and the ingredients are well combined.
- Add the shredded green papaya to the bowl and toss until it's evenly coated with the dressing.
- Gently fold in the halved cherry tomatoes, chopped peanuts, and dried shrimp (if using).
- Transfer the salad to a serving plate and garnish with chopped cilantro and green onions.
