Ingredients:
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon grated ginger
  • 1 teaspoon grated lemongrass
  • 1/2 cup fresh basil leaves, chopped
  • Salt and pepper, to taste
  • Cooked jasmine rice, for serving
  • Fresh cilantro, for garnish
  • Lime wedges, for garnish
Instructions:
  1. Heat vegetable oil in a large skillet or wok over medium heat. Add thinly sliced onion and minced garlic, and cook until softened and fragrant, about 2-3 minutes.
  2. Add thinly sliced red bell pepper and yellow bell pepper to the skillet, and cook for another 2-3 minutes until they start to soften.
  3. Push the vegetables to one side of the skillet, and add the peeled and deveined shrimp to the other side. Cook the shrimp for 1-2 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, pour in the coconut milk and stir in the red curry paste, fish sauce, brown sugar, lime juice, grated ginger, and grated lemongrass. Bring the mixture to a simmer, stirring occasionally.
  5. Once the curry sauce is simmering, add the cooked shrimp back to the skillet along with the chopped fresh basil leaves. Stir to coat the shrimp evenly with the sauce.
  6. Let the curry simmer for another 2-3 minutes to allow the flavors to meld together. Taste and adjust seasoning with salt and pepper, if needed.
  7. Remove the skillet from heat and garnish the Thai-Inspired Coconut Curry Shrimp with fresh cilantro leaves and lime wedges.
