  • Handful of fresh cilantro leaves, for garnish
  • Thinly sliced green onions, for garnish
Instructions:

  1. In a large pot, bring the chicken or vegetable broth to a gentle simmer over medium heat.
  2. Add lemongrass, kaffir lime leaves, shallots, garlic, galangal or ginger, and sliced red chili peppers to the simmering broth. Let it simmer for about 5-7 minutes to infuse the flavors.
  3. Stir in fish sauce, soy sauce, lime juice, and sugar. Taste the broth and adjust the seasoning if needed, adding more fish sauce for saltiness, lime juice for acidity, or sugar to balance the flavors.
  4. Add peeled and deveined shrimp to the pot and cook for 2-3 minutes until they turn pink and opaque.
  5. Add tomato wedges and straw mushrooms to the pot and cook for another 2-3 minutes until the tomatoes are slightly softened.
  6. Once the shrimp is cooked and the vegetables are tender, remove the pot from heat.
