This Secret Banana Cake Recipe Absolutely F****!!

Right...So... I was bored one day and was Googling for different Banana Cake Recipes. Well. I took a twist to mine, so hopefully this is where you will only find it. Thank me later! This is a Banana and Coffee Cake with Peanut Butter Frosting. Make sure you do not eat this at NIGHT or you won't be getting any sleep if youre caffeine sensitive. Thank me x100 later after you have made it.

For the Cake:​

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 2-3 medium bananas)
  • 1/2 cup strong brewed coffee, cooled
  • 1 teaspoon vanilla extract

For the Peanut Butter Frosting:​

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, at room temperature
  • 2 cups powdered sugar, sifted
  • 2-3 tablespoons milk or heavy cream
  • 1 teaspoon vanilla extract

Directions:​

Making the Cake:​

  1. Preheat the Oven and Prep the Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition.
  4. Add Bananas and Coffee: Mix in the mashed bananas, brewed coffee, and vanilla extract until well combined.
  5. Combine with Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Do not overmix.
  6. Bake: Pour the batter into the prepared pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Making the Peanut Butter Frosting:​

  1. Beat Peanut Butter and Butter: In a large bowl, beat the peanut butter and butter together until smooth and creamy.
  2. Add Powdered Sugar: Gradually add the powdered sugar, beating until the frosting is smooth. Add milk or cream, one tablespoon at a time, until the frosting reaches a spreadable consistency.
  3. Flavor with Vanilla: Mix in the vanilla extract.

Assembling the Cake:​

  1. Frost the Cake: Once the cake has completely cooled, spread the peanut butter frosting over the top and sides of the cake.
  2. Decorate: Optionally, you can garnish the cake with banana slices, chopped peanuts, or a drizzle of melted chocolate for an extra touch of indulgence.

Im back again. Guess what. Made an EXTRA moist banana cake recipe that I will share with all of you. You wont find this ANYWHERE!!! Also...I prefer yoghurt instead of sour cream ...this is by preference of course and what you have in the refrigerator. Just know that any frosting can be chosen for this... look it up since I havent made any for this recipe.

Ingredients:​

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar, packed
  • 2 large eggs, at room temperature
  • 1 3/4 cups mashed overripe bananas (about 4-5 medium bananas)
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or plain yogurt (to enhance moisture)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions:​

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9x13-inch baking pan or a similar size round pan.
  2. Combine Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Mix Wet Ingredients:
    • In a large bowl, combine the melted butter and brown sugar. Beat until well mixed.
    • Add the eggs, one at a time, beating well after each addition.
    • Stir in the mashed bananas, buttermilk, and vanilla extract until well combined.
    • Mix in the sour cream or yogurt until smooth.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Avoid overmixing to ensure the cake remains tender.
    • If using, fold in the chopped walnuts or pecans.
  5. Bake the Cake:
    • Pour the batter into the prepared pan, smoothing the top with a spatula.
    • Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
  6. Cool the Cake:
    • Allow the cake to cool in the pan on a wire rack. The cake is deliciously moist when served slightly warm or at room temperature
 
I've been craving something sweet lately, and this Banana Cake recipe seems perfect! 🍰 Though, I think I'll swap the walnuts for chocolate chips for a twist. BTW thanks for sharing :)
