Ingredients
- Base:
- 1 cup tiger nuts (finely ground, or you can use tiger nut flour)
- 1/2 cup rolled oats
- 1/4 cup sunflower seed butter (or any nut-free butter)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- Mix-Ins:
- 1/4 cup mini chocolate chips or dark chocolate chips (optional)
- 1/4 cup dried fruit (like raisins, cranberries, or chopped apricots)
- 1 tablespoon chia seeds or flaxseeds (optional)
- A pinch of salt
Instructions
- Combine Ingredients: In a large mixing bowl, combine the ground tiger nuts, rolled oats, sunflower seed butter, honey or maple syrup, vanilla extract, and salt. Mix until well combined.
- Add Mix-Ins: Stir in the mini chocolate chips, dried fruit, and seeds if using. Make sure everything is evenly distributed.
- Form Bites: Scoop out small portions of the mixture and roll them into balls (about 1 inch in diameter).
- Chill: Place the energy bites on a parchment-lined baking sheet or a plate and refrigerate for about 30 minutes to firm up.
- Store: Once firm, transfer the bites to an airtight container. They can be stored in the fridge for up to a week or in the freezer for longer.
Tips
- You can adjust the sweetness by adding more or less honey/maple syrup.
