- Cook the Pasta: In a large pot of boiling salted water, cook the macaroni according to the package instructions until al dente. Drain and set aside.
- Make the Roux: In the same pot, melt the butter over medium heat. Sprinkle in the flour and stir for about 1 minute to cook off the raw flour taste.
- Add the Milk: Gradually pour in the milk, whisking constantly to prevent any lumps. Keep whisking until the mixture is smooth and starts to thicken.
- Cheese It Up: Lower the heat and add the shredded cheese, stirring until the cheese is completely melted and the sauce is creamy.
- Combine: Add the cooked macaroni to the cheese sauce, stirring to coat all the pasta evenly. Season with salt, pepper, and a pinch of paprika if using.
- Serve Warm: Transfer to a bowl and dive into the gooey goodness!
