  • 500g white fish fillets (such as tilapia or cod), finely minced or ground

  • 1 egg
  • 2 kaffir lime leaves, finely chopped (optional)
  • 1 tablespoon fish sauce
  • 1 tablespoon palm sugar (or brown sugar)
  • 1 tablespoon cornstarch
  • 1/2 cup green beans, finely chopped
  • 1/4 cup finely chopped fresh cilantro
  • Vegetable oil, for frying

  1. Prepare the Fish Mixture:
    • In a large bowl, combine minced fish, red curry paste, egg, kaffir lime leaves (if using), fish sauce, palm sugar, and cornstarch. Mix well until all ingredients are thoroughly incorporated.
  2. Add Vegetables:
    • Fold in chopped green beans and fresh cilantro into the fish mixture. Mix until evenly distributed.
  3. Shape and Fry the Fish Cakes:
    • Heat vegetable oil in a frying pan over medium heat.

  4. Fry the Fish Cakes:

    • Fry each side for about 3-4 minutes, or until golden brown and cooked through.
    • Remove the fish cakes from the oil and drain on paper towels to remove excess oil.
