Ingredients:
- 500g white fish fillets (such as tilapia or cod), finely minced or ground
- 2 tablespoons red curry paste
- 1 egg
- 2 kaffir lime leaves, finely chopped (optional)
- 1 tablespoon fish sauce
- 1 tablespoon palm sugar (or brown sugar)
- 1 tablespoon cornstarch
- 1/2 cup green beans, finely chopped
- 1/4 cup finely chopped fresh cilantro
- Vegetable oil, for frying
Instructions:
- Prepare the Fish Mixture:
- In a large bowl, combine minced fish, red curry paste, egg, kaffir lime leaves (if using), fish sauce, palm sugar, and cornstarch. Mix well until all ingredients are thoroughly incorporated.
- Add Vegetables:
- Fold in chopped green beans and fresh cilantro into the fish mixture. Mix until evenly distributed.
- Shape and Fry the Fish Cakes:
- Heat vegetable oil in a frying pan over medium heat.
- Take a spoonful of the fish mixture and shape it into a small patty or ball (about 2 inches in diameter). Repeat with the remaining mixture.
- Fry the Fish Cakes:
- Carefully place the shaped fish cakes into the hot oil, a few at a time, without overcrowding the pan.
- Fry each side for about 3-4 minutes, or until golden brown and cooked through.
- Remove the fish cakes from the oil and drain on paper towels to remove excess oil.
- Serve:
- Arrange Tod Man Pla on a serving platter.
- Serve hot with sweet chili sauce or cucumber relish on the side for dipping.
