Ingredients:
  • 14 oz (400g) firm tofu, drained and cubed
  • 8 oz (225g) mushrooms (such as button or cremini), sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 2 green onions, chopped (optional)
  • Cooked rice or noodles, for serving
Instructions:
  1. Heat a tablespoon of oil in a large skillet or wok over medium-high heat.
  2. Add the cubed tofu to the skillet and cook for 5-7 minutes, stirring occasionally, until golden brown and slightly crispy on all sides. Remove the tofu from the skillet and set aside.
  3. In the same skillet, add a little more oil if needed, then add the sliced mushrooms. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender and golden brown.
  4. Add the minced garlic and ginger to the skillet with the mushrooms and cook for another minute until fragrant.
  5. Return the cooked tofu to the skillet with the mushrooms, garlic, and ginger.
  6. In a small bowl, whisk together the soy sauce, hoisin sauce, and sesame oil. Pour the sauce over the tofu and mushrooms in the skillet.
  7. Stir everything together and cook for another 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  8. If desired, sprinkle chopped green onions over the stir-fry just before serving.
  9. Serve the tofu and mushroom stir-fry hot over cooked rice or noodles.
