- 3 large eggs
- 1 tablespoon butter or olive oil
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup shredded cheese (optional, such as cheddar or mozzarella)
- Salt and pepper to taste
- Prepare Ingredients:
- Crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.
- Chop the basil leaves and halve the cherry tomatoes.
- Cook Tomatoes:
- Heat the butter or olive oil in a non-stick skillet over medium heat.
- Add the cherry tomatoes and cook for 2-3 minutes until slightly softened. Remove from the skillet and set aside.
- Cook the Omelette:
- Pour the beaten eggs into the skillet, swirling to coat the bottom evenly.
- Cook for 1-2 minutes until the edges start to set.
- Add Filling:
