Hello everyone, I wanna let you try this Tomato Basil Soup. It is a classic comfort food that's perfect for cozying up on chilly days or as a starter for any meal. This homemade version is bursting with flavor and easy to make. Serve it with a slice of crusty bread or a grilled cheese sandwich for a satisfying and delicious meal.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (28 ounces each) whole peeled tomatoes
  • 1 cup vegetable broth or chicken broth
  • 1/4 cup fresh basil leaves, chopped (plus extra for garnish)
  • 1/2 cup heavy cream or half-and-half
  • Salt and pepper, to taste
  • Optional toppings: grated Parmesan cheese, croutons, additional fresh basil leaves
Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onion to the pot and sautƩ for 3-4 minutes, or until softened and translucent.
  3. Add the minced garlic to the pot and cook for an additional 1-2 minutes, or until fragrant.
  4. Pour the canned tomatoes and their juices into the pot, breaking up the tomatoes with a spoon or spatula.
  5. Add the vegetable broth to the pot and stir to combine.
  6. Bring the soup to a simmer, then reduce the heat to low. Cover the pot and let the soup simmer for 15-20 minutes to allow the flavors to meld.
  7. After simmering, remove the pot from the heat and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup to a blender and puree it in batches until smooth, then return it to the pot.
  8. Stir in the chopped fresh basil and heavy cream or half-and-half until well combined.
  9. Season the soup with salt and pepper to taste, adjusting the seasoning as needed.
  10. Return the pot to the stove over low heat and gently reheat the soup until warmed through, being careful not to let it boil.
  11. Once heated through, ladle the Tomato Basil Soup into bowls. Garnish each bowl with a sprinkle of grated Parmesan cheese, a few croutons, and additional fresh basil leaves, if desired.
  12. Serve the Tomato Basil Soup hot, and enjoy the comforting and flavorful goodness!
