- 4 boneless, skinless chicken breasts

- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil, for frying
- Tonkatsu sauce, for serving
- Optional: Shredded cabbage and lemon wedges, for serving
Instructions:
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch. Season both sides of the chicken with salt and pepper.
- Set up a breading station: Place the flour, beaten eggs, and panko breadcrumbs in three separate shallow dishes.
- Dredge each chicken breast in the flour, shaking off any excess. Then dip them into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken breasts evenly with the panko breadcrumbs, pressing gently to adhere.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Once hot, carefully add the breaded chicken breasts to the skillet, making sure not to overcrowd the pan.
- Fry the chicken for about 4-5 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 165°F (75°C).
- Once cooked, transfer the chicken to a wire rack or paper towels to drain any excess oil.
- Serve the Tonkatsu Chicken hot with tonkatsu sauce for dipping. Optionally, serve with shredded cabbage and lemon wedges on the side.
