- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 6 cups chicken or vegetable broth
- 1 (14.5-ounce) can diced tomatoes
- 1 (9-ounce) package refrigerated cheese tortellini
- 3 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
Instructions
- Sauté Vegetables
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
- Add the minced garlic and cook for another 1-2 minutes, until fragrant.
- Add Broth and Tomatoes
- Stir in the dried Italian seasoning and red pepper flakes, if using.
- Pour in the chicken or vegetable broth and the can of diced tomatoes (with their juice).
- Bring the mixture to a boil.
- Cook Tortellini
- Once boiling, add the cheese tortellini to the pot.
- Reduce the heat to a simmer and cook according to the package instructions, usually about 7-9 minutes, until the tortellini are tender.
- Add Spinach
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Season the soup with salt and pepper to taste.
- Serve
- Ladle the soup into bowls.
- Top with grated Parmesan cheese.
