Ingredients
Sushi Rice
- 1 cup sushi rice
- 1 cup coconut milk
- 1/2 cup water
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 mango, sliced thin
- 1 avocado, sliced thin
- 8 grilled shrimp
- 3 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon honey
- Rinse sushi rice until water runs clear. Cook rice with coconut milk, water, sugar, and salt. Let cool.
- Lay a sheet of plastic wrap on a bamboo sushi mat. Spread coconut rice evenly.
- Arrange mango, avocado, and shrimp. Roll tightly and slice into pieces.
- Mix soy sauce, lime juice, and honey for dipping. Serve sushi with sauce on the side.
