Take your sushi game to the next level with this tropical twist! Mango, avocado, and grilled shrimp wrapped in coconut rice create a burst of island-inspired flavors. Dip in a tangy lime sauce for the ultimate bite. 🌴🍣

Ingredients
Sushi Rice

  • 1 cup sushi rice
  • 1 cup coconut milk
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
Filling
  • 1 mango, sliced thin
  • 1 avocado, sliced thin
  • 8 grilled shrimp
Lime Dipping Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey
Directions
  1. Rinse sushi rice until water runs clear. Cook rice with coconut milk, water, sugar, and salt. Let cool.
  2. Lay a sheet of plastic wrap on a bamboo sushi mat. Spread coconut rice evenly.
  3. Arrange mango, avocado, and shrimp. Roll tightly and slice into pieces.
  4. Mix soy sauce, lime juice, and honey for dipping. Serve sushi with sauce on the side.
