Ingredients:

  • 8 oz (225g) pasta of your choice (such as penne, fusilli, or spaghetti)
  • 2 cans (5 oz/140g each) tuna, drained
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 1 can (14 oz/400g) diced tomatoes
  • 1/4 cup (60ml) tomato sauce or passata
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Fresh parsley, chopped, for garnish (optional)
  • Grated Parmesan cheese, for serving (optional)
Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving some pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until softened and fragrant, about 2-3 minutes.
  3. Add the drained tuna to the skillet and break it up with a spoon. Cook for another 2-3 minutes.
  4. Stir in the diced tomatoes, tomato sauce or passata, dried oregano, salt, pepper, and red pepper flakes (if using). Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the flavors to meld together.
  5. Add the cooked pasta to the skillet and toss to coat the pasta evenly with the sauce. If the sauce is too thick, you can add a splash of reserved pasta water to loosen it up.
  6. Taste and adjust the seasoning as needed.
  7. Serve the tuna pasta hot, garnished with chopped parsley and grated Parmesan cheese if desired.

Feel free to customize the recipe by adding other ingredients such as olives, capers, cherry tomatoes, or spinach for extra flavor and nutrition.
