Good food is equals to good rest! Wan to enjoy my Tuna Pasta?

- 8 oz (225g) pasta of your choice (such as penne, fusilli, or spaghetti)
- 2 cans (5 oz/140g each) tuna, drained
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 onion, finely chopped
- 1 can (14 oz/400g) diced tomatoes
- 1/4 cup (60ml) tomato sauce or passata
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Red pepper flakes (optional)
- Fresh parsley, chopped, for garnish (optional)
- Grated Parmesan cheese, for serving (optional)
- Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving some pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until softened and fragrant, about 2-3 minutes.
- Add the drained tuna to the skillet and break it up with a spoon. Cook for another 2-3 minutes.
- Stir in the diced tomatoes, tomato sauce or passata, dried oregano, salt, pepper, and red pepper flakes (if using). Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the flavors to meld together.
- Add the cooked pasta to the skillet and toss to coat the pasta evenly with the sauce. If the sauce is too thick, you can add a splash of reserved pasta water to loosen it up.
- Taste and adjust the seasoning as needed.
- Serve the tuna pasta hot, garnished with chopped parsley and grated Parmesan cheese if desired.
