- 6 large eggs
- 1 cup diced cooked turkey (you can use leftover turkey or turkey sausage)
- 1 cup chopped broccoli florets
- 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite cheese)
- Salt and pepper to taste
- Optional add-ins: diced bell peppers, onions, spinach, or any other vegetables you like
- Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with paper liners.
- In a large bowl, whisk together the eggs until well beaten. Season with salt and pepper.
- Stir in the diced turkey, chopped broccoli, shredded cheese, and any other add-ins you're using until everything is evenly combined.
- Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the muffins are set and the tops are golden brown.
- Remove the muffins from the oven and let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
- Once cooled, store the muffins in an airtight container in the refrigerator for up to 3-4 days.
- Reheat the muffins in the microwave for 30-60 seconds before serving, if desired.
