  • 3 cloves garlic, minced
  • 1 pound ground turkey (preferably lean)

  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon tomato paste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced green onions
Instructions:
  1. Sauté Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  2. Brown Turkey: Push the vegetables to the side of the pot and add the ground turkey. Cook, breaking up the turkey with a spoon, until browned and cooked through, about 5-7 minutes.
  3. Season: Stir in the chili powder, ground cumin, paprika, dried oregano, cayenne pepper (if using), salt, and pepper. Cook for 1-2 minutes until the spices are fragrant.
  4. Add Beans and Tomatoes: Add the kidney beans, black beans, diced tomatoes (with their juices), chicken broth, and tomato paste to the pot. Stir well to combine.
  5. Simmer: Bring the chili to a simmer. Reduce the heat to low and let it simmer, uncovered, for 20-30 minutes, stirring occasionally, until the flavors are well blended and the chili has thickened to your desired consistency.
  6. Adjust Seasoning: Taste and adjust the seasoning with more salt and pepper if needed.
