Turkish Menemen is a delicious and comforting dish that's perfect for breakfast or brunch. I recently made it, and the combination of fresh tomatoes, peppers, and eggs cooked together creates a flavorful and satisfying meal. It’s simple to prepare and brings a bit of Turkish flair to your table. Let’s dive into the recipe!
Ingredients:
- 2 tbsp olive oil or butter
- 1 medium onion, diced (optional)
- 2 green bell peppers, diced (you can use a mix of green and red)
- 3-4 ripe tomatoes, diced (or one can of diced tomatoes)
- 4 large eggs
- Salt and pepper to taste
- 1 tsp red pepper flakes (optional, for a bit of heat)
- Fresh parsley or cilantro, chopped (for garnish)
- Feta cheese, crumbled (optional)
Instructions:
- Sauté the Vegetables: In a large skillet, heat the olive oil or butter over medium heat. If you're using onion, add it first and sauté until translucent. Then, add the diced bell peppers and cook for about 5 minutes, until they soften.
- Add the Tomatoes: Stir in the diced tomatoes, salt, pepper, and red pepper flakes (if using). Cook for about 5-7 minutes, allowing the tomatoes to break down and create a chunky sauce.
- Cook the Eggs: Make small wells in the tomato mixture and crack the eggs directly into them. Cover the skillet with a lid and let the eggs cook for about 5 minutes, or until the whites are set but the yolks are still runny. You can cook them longer if you prefer firmer yolks.
- Garnish and Serve: Once cooked to your liking, remove the skillet from heat. Garnish with chopped fresh parsley or cilantro and crumbled feta cheese, if desired.
- Enjoy: Serve the Menemen straight from the skillet with crusty bread for dipping.
