Packed with the goodness of turmeric and aromatic spices, these potatoes are a delicious way to add a pop of color and flavor to any meal.

Ingredients:
- 4 medium potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- Fresh cilantro or parsley, chopped (for garnish)

Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a large mixing bowl, toss the diced potatoes with olive oil, ground turmeric, ground cumin, paprika, salt, and pepper until evenly coated.
3. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
4. Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and crispy on the outside and tender on the inside, stirring halfway through.
5. Once the potatoes are cooked to perfection, remove them from the oven and transfer to a serving dish.
6. Garnish the Turmeric Potatoes with freshly chopped cilantro or parsley for a pop of freshness and color.
7. Serve hot as a side dish alongside your favorite main course, and enjoy the delicious flavors of turmeric-infused potatoes! 🥔💛
