Sharing a taste of Ukraine with this classic recipe for Ukrainian Borscht! Perfect for warming up on chilly days or anytime you crave something hearty and wholesome. This is one of my most recent discoveries and I am very excited to share it with you!

- 2 large beets, peeled and grated
- 2 carrots, peeled and grated
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 potatoes, peeled and diced
- 4 cups beef or vegetable broth
- 1 can (14 oz) diced tomatoes
- 2 tablespoons tomato paste
- 2 tablespoons vegetable oil
- 1/4 cup white vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
- Sour cream and fresh dill for serving
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute.
- Stir in the grated beets and carrots, and cook for about 10 minutes, stirring occasionally, until the vegetables are softened.
- Add the diced potatoes, diced tomatoes, tomato paste, and beef or vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20-25 minutes, or until the potatoes are tender.
- Stir in the white vinegar, sugar, salt, and pepper. Taste and adjust seasoning if needed.
- Serve the borscht hot, garnished with a dollop of sour cream and a sprinkle of fresh dill. Enjoy!
