Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 small head cabbage, shredded
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)
  • Lemon wedges, for serving (optional)
Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  2. Add the minced garlic to the pot and cook for an additional minute, until fragrant.
  3. Stir in the shredded cabbage and diced tomatoes, and cook for 5 minutes, allowing the cabbage to wilt slightly.
  4. Pour in the vegetable broth and add the dried thyme and oregano. Season with salt and pepper, to taste.
  5. Bring the soup to a simmer, then reduce the heat to low and let it simmer for 20-25 minutes, or until the vegetables are tender.
  6. Taste and adjust the seasoning, adding more salt and pepper if needed.
  7. Ladle the Vegan Detox Cabbage Soup into bowls and garnish with fresh parsley, if desired. Serve with lemon wedges on the side for an extra burst of flavor.
