- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 small head cabbage, shredded
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
- Lemon wedges, for serving (optional)
- Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
