I recently tried this fantastic vegan Alfredo sauce recipe, and it was such a game-changer! It’s creamy, rich, and absolutely delicious, without any dairy. I couldn’t believe how simple it was to make, and it paired perfectly with pasta. Here’s how you can make it too:
Ingredients:
- 1 cup raw cashews (soaked in hot water for at least 15 minutes)
- 1 1/2 cups unsweetened almond milk
- 3 tbsp nutritional yeast
- 2 tbsp lemon juice
- 2 cloves garlic
- 1 tbsp olive oil
- 1 tsp onion powder
- Salt and pepper to taste
Instructions:
- Drain the soaked cashews and add them to a blender.
- Pour in the almond milk, nutritional yeast, lemon juice, garlic, and olive oil.
- Blend until the mixture is smooth and creamy.
- Add onion powder, salt, and pepper. Blend again to combine.
- Pour the sauce into a saucepan and heat over medium heat, stirring occasionally until it thickens, about 5-7 minutes.
- Toss with your favorite pasta and enjoy!
