I recently made a Vegan Shepherd's Pie, and it was a comforting, hearty meal perfect for a cozy night in. The savory lentil filling paired with creamy mashed potatoes was simply delightful. Here’s how you can make it!

Ingredients:

For the Filling:

  • 1 tablespoon olive oil
  • 1 onion, diced 🧅
  • 2 carrots, diced 🥕
  • 2 celery stalks, diced
  • 3 cloves garlic, minced 🧄
  • 1 cup mushrooms, chopped 🍄
  • 1 cup cooked lentils (green or brown)
  • 1 cup vegetable broth
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1 cup frozen peas 🍃

For the Mashed Potatoes:

  • 4 large potatoes, peeled and cubed 🥔
  • 1/4 cup almond milk (or any plant-based milk)
  • 2 tablespoons vegan butter
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Potatoes: Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
  2. Make the Mashed Potatoes: Add almond milk and vegan butter to the potatoes. Mash until smooth and creamy, then season with salt and pepper to taste. Set aside.
  3. Cook the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté for about 5 minutes until softened. Stir in the garlic and mushrooms, cooking for another 3-4 minutes.
  4. Add the Lentils: Add the cooked lentils, vegetable broth, tomato paste, soy sauce, thyme, and rosemary. Stir well and let simmer for about 10 minutes, allowing the flavors to meld. Season with salt and pepper, then mix in the frozen peas.
  5. Assemble the Pie: Preheat your oven to 400°F (200°C). Spread the lentil mixture evenly in a baking dish, then top with the mashed potatoes, smoothing it out with a spatula. You can create a textured pattern on top with a fork for a nice finish.
  6. Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the top is slightly golden and crispy.
  7. Serve: Let it cool for a few minutes before serving. Enjoy it with a side of your favorite green salad! 🥗

Conclusion

Vegan Shepherd's Pie is a fantastic way to enjoy a classic dish without any animal products. It's packed with flavor and nutrients, making it a perfect comfort food for anyone. Plus, it’s an excellent way to use up leftover veggies! Give it a try, and I’m sure it will become a staple in your meal rotation. 🌱💚
