Flavorful Connoisseur
It's so simple to make, and it tastes amazing! I wanted to share this with you guys. I cooked this wonderful Vegetable Fried Rice in about 15 minutes! Sesame oil, soy sauce, scrambled eggs, and a rainbow of colorful veggies were used to flavor some rice. I assure you that it's an ideal light meal or accompaniment to your preferred leftovers. 
Here's a simplified version of the recipe:
Ingredients:
- 2Β½ tbsp vegetable oil (divided)
- 2 large eggs (lightly beaten)
- 1 cup diced onion
- 4 cloves garlic (minced)
- Β½ tsp kosher salt
- Ground black pepper (to taste)
- 3 cups cooked jasmine rice (chilled)
- 1 cup frozen peas and carrots
- 2-3 tbsp low-sodium soy sauce
- 3 green onions (thinly sliced)
- 1 tsp toasted sesame oil
Instructions:
1. Heat Β½ tbsp of vegetable oil in a wok or large nonstick frying pan over medium heat. Add beaten eggs and gently scramble for 1-2 minutes until softly set. Transfer to a bowl and set aside.
2. Add 1 tbsp of oil to the wok, then add onion, garlic, salt, and pepper. Cook for 4-5 minutes until onion is tender, then push it to the side.
3. Add remaining oil and let it heat for a few seconds. Add cooked rice, frozen peas and carrots, and soy sauce. Stir-fry for 3-4 minutes until rice is heated through.
4. Remove from heat and stir in scrambled eggs, green onions, and sesame oil. Serve immediately.
