Ingredients:

  • 1 cup chickpea flour (besan)
  • 1/4 cup rice flour
  • 1 small onion, thinly sliced
  • 1 medium potato, peeled and thinly sliced
  • 1 small cauliflower, cut into small florets
  • 1 small carrot, thinly sliced
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 2 tablespoons chopped fresh coriander (cilantro)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Water, as needed
  • Oil for frying

Instructions:

  1. In a large mixing bowl, combine the chickpea flour, rice flour, cumin seeds, turmeric powder, chili powder, garam masala, and salt.
  2. Gradually add water to the dry ingredients, whisking continuously, until you have a smooth, thick batter. The consistency should be similar to pancake batter.
  3. Add the sliced onions, potatoes, cauliflower, carrots, green chilies, and chopped coriander to the batter. Mix well until all the vegetables are coated evenly.
  4. Heat oil in a deep frying pan or pot over medium heat.
  5. Once the oil is hot, drop spoonfuls of the vegetable batter into the oil, making sure not to overcrowd the pan.
  6. Fry the pakoras in batches, turning occasionally, until they are golden brown and crispy, about 4-5 minutes per batch.
  7. Using a slotted spoon, remove the pakoras from the oil and drain them on paper towels to remove excess oil.
  8. Serve the vegetable pakoras hot with your favorite chutney or dipping sauce.
