- 1 cup chickpea flour (besan)
- 1/4 cup rice flour
- 1 small onion, thinly sliced
- 1 medium potato, peeled and thinly sliced
- 1 small cauliflower, cut into small florets
- 1 small carrot, thinly sliced
- 2-3 green chilies, finely chopped (adjust to taste)
- 2 tablespoons chopped fresh coriander (cilantro)
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- Water, as needed
- Oil for frying
Instructions:
- In a large mixing bowl, combine the chickpea flour, rice flour, cumin seeds, turmeric powder, chili powder, garam masala, and salt.
- Gradually add water to the dry ingredients, whisking continuously, until you have a smooth, thick batter. The consistency should be similar to pancake batter.
- Add the sliced onions, potatoes, cauliflower, carrots, green chilies, and chopped coriander to the batter. Mix well until all the vegetables are coated evenly.
- Heat oil in a deep frying pan or pot over medium heat.
- Once the oil is hot, drop spoonfuls of the vegetable batter into the oil, making sure not to overcrowd the pan.
- Fry the pakoras in batches, turning occasionally, until they are golden brown and crispy, about 4-5 minutes per batch.
- Using a slotted spoon, remove the pakoras from the oil and drain them on paper towels to remove excess oil.
- Serve the vegetable pakoras hot with your favorite chutney or dipping sauce.
