Ingredients:
- 1 small head of cabbage, thinly sliced or shredded
- 1 large carrot, grated
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil
- 2 tablespoons honey (adjust to taste)
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Optional: 1/2 teaspoon celery seeds or poppy seeds for added flavor
Instructions:
- Prepare the Vegetables:
- Thinly slice or shred the cabbage.
- Grate the carrot.
- Make the Dressing:
- In a small bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper until well combined.
- If using, stir in the celery seeds or poppy seeds.
- Combine:
- Place the shredded cabbage and grated carrot in a large bowl.
- Toss:
- Pour the dressing over the cabbage and carrot mixture.
- Toss until the vegetables are evenly coated with the dressing.
- Chill and Serve:
- Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled as a side dish or topping for sandwiches, tacos, or burgers.
