Warm Green Bean Salad with Bacon Recipe:

Ingredients:

• 1 lb fresh green beans, trimmed
• 4 slices bacon, cooked and crumbled
• 1/4 cup sliced almonds, toasted
• 2 shallots, thinly sliced
• 2 tablespoons olive oil
• 1 tablespoon red wine vinegar
• 1 teaspoon Dijon mustard
• Salt and pepper, to taste
• Chopped fresh parsley, for garnish

Instructions:

1. Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, or until crisp-tender. Drain the beans and immediately plunge them into a bowl of ice water to stop the cooking process. Drain again and pat dry.
2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced shallots and cook, stirring occasionally, until golden and crispy, about 5-7 minutes. Remove the shallots from the skillet and set aside.
3. In the same skillet, add the remaining tablespoon of olive oil. Add the blanched green beans and sauté for 2-3 minutes, or until heated through and slightly charred.
4. In a small bowl, whisk together the red wine vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.
5. Arrange the warm green beans on a serving platter. Drizzle with the vinaigrette and sprinkle with the crumbled bacon, toasted almonds, and crispy shallots.
