City chicken is actually a bit of a misnomer. Despite its name, it's usually made with pork, not chicken. 
The dish originated during the Great Depression when chicken was more expensive than pork, so they used pork to mimic chicken skewers. It's a delicious, comforting dish that's definitely worth a try!
