What's the best type of kale for soup?

I'm trying to figure out which type of kale works best for soup. There are so many varieties, and I want to pick the one that tastes the best and holds up well. Have you tried different types? Which one do you think adds the best flavor and texture to a warm, comforting soup? 🄬
