Whole Roast Chicken with Carrots

My children don't eat carrots but when I cooked this recipe, they can now eat carrots! It's simply called Whole Roast Chicken with Carrots

And here's a delicious recipe for a whole roast chicken with carrots:

Ingredients:​

For the Roast Chicken:

  • 1 whole chicken (about 4-5 pounds)
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil or melted butter
  • 1 lemon, halved
  • 4-5 garlic cloves, peeled and smashed
  • Fresh herbs (rosemary, thyme, or sage), optional
For the Carrots:

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 2-3 sprigs of fresh thyme (or 1 teaspoon dried thyme)
For Serving (Optional):

  • Fresh parsley, chopped, for garnish
  • Lemon wedges

Instructions:​

1. Preparing the Chicken:

  • Preheat your oven to 425°F (220°C).
  • Remove the giblets from the chicken cavity, if included. Pat the chicken dry with paper towels.
  • Season the cavity generously with salt and pepper. Stuff the cavity with the halved lemon, smashed garlic cloves, and fresh herbs (if using).
  • Tie the legs together with kitchen twine and tuck the wing tips under the body of the chicken.
  • Rub the outside of the chicken with olive oil or melted butter. Season the outside generously with salt and pepper.
2. Preparing the Carrots:

  • In a bowl, toss the carrot sticks with olive oil, salt, pepper, and thyme.
  • Spread the carrots in a single layer on a baking sheet or in a roasting pan.
3. Roasting:

  • Place the seasoned chicken on a rack in a roasting pan or directly on top of the carrots in the roasting pan.
  • Roast the chicken in the preheated oven for about 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  • About halfway through cooking, stir the carrots to ensure even cooking.
4. Resting and Serving:

  • Once the chicken is done, transfer it to a cutting board and let it rest for about 10-15 minutes before carving.
  • Meanwhile, if the carrots need more caramelization, you can return them to the oven for a few more minutes.
  • Carve the chicken and serve with the roasted carrots on the side.
  • Garnish with chopped fresh parsley and serve with lemon wedges if desired.
