Our Whole Wheat Veggie Calzones are stuffed with gooey cheese and fresh veggies, all wrapped in a hearty whole wheat crust. Perfect for a tasty and nutritious meal that everyone will love!

For the Dough:- 2 1/4 teaspoons active dry yeast (1 packet)
300×224 - 1 cup warm water
- 1 tablespoon honey or sugar
- 2 1/2 cups whole wheat flour
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 small zucchini, diced
- 1 small bell pepper, diced
- 1/2 cup mushrooms, diced
- 1/2 cup baby spinach leaves, chopped
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
- Marinara sauce, for dipping
Instructions
- Prepare the Dough:
- In a small bowl, combine the warm water, yeast, and honey or sugar. Let it sit for 5-10 minutes until frothy.
- In a large bowl, mix the whole wheat flour and salt. Add the yeast mixture and olive oil, and stir until a dough forms.
- Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a clean towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.
- Prepare the Filling:
- In a large bowl, combine the mozzarella, ricotta, and Parmesan cheeses.
- Add the diced zucchini, bell pepper, mushrooms, and chopped spinach. Season with oregano, basil, salt, and pepper. Mix until well combined.
- Preheat Oven:
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- Assemble the Calzones:
- Punch down the dough and divide it into 4 equal portions. Roll each portion into a circle on a floured surface.
- Spoon a portion of the cheese and veggie filling onto one half of each dough circle, leaving a border around the edges.
- Fold the dough over the filling to create a half-moon shape. Press the edges together to seal, and crimp with a fork to ensure they’re well sealed.
- Place the calzones on the prepared baking sheet.
- Bake the Calzones:
- Brush the tops of the calzones with the beaten egg for a golden finish.
- Bake for 15-20 minutes, or until the calzones are golden brown and the filling is melted and bubbly.
- Cool and Serve:
- Let the calzones cool for a few minutes before serving.
- Serve with warm marinara sauce for dipping.
