Why does my Brazilian cheese bread turn out so chewy instead of fluffy?

🤔🥖 I've tried different recipes, but my cheese bread always ends up chewy. What am I doing wrong? Is it the ingredients or the baking process? Any advice to achieve that light and fluffy texture? 🧀😕
 
Try using less tapioca flour and avoid overmixing, as it can make the bread chewy. Baking at a higher temperature for a shorter time might also help achieve that fluffy texture. 🧀 Have you tried different cheeses? That could make a difference!
