Today, I'm excited to share a delightful dessert that captures the essence of summer – Wild Raspberry Mousse. This airy and creamy mousse combines the natural sweetness of fresh black raspberries with a hint of maple syrup and lemon. Perfect for any occasion, this mousse will impress your guests and leave them craving more. Let's dive in and make this scrumptious treat together!
Ingredients:
- 3 cups fresh black raspberries
- ½ cup pure maple syrup (or to taste)
- 1 tablespoon freshly squeezed lemon juice
- ½ teaspoon fresh lemon zest
- 1 pinch salt
- 1 ¼ teaspoons powdered unflavored gelatin
- 3 tablespoons cold water
- ½ cup plain whole milk Greek yogurt
- 1 ½ cups heavy cream
- ½ teaspoon vanilla extract
Instructions:
- Place raspberries, maple syrup, lemon juice, lemon zest, and salt in a saucepan over medium-low heat. Cook, stirring often, until berries start to burst and release their juices, about 10 minutes.
- Place a fine mesh sieve over a medium bowl. Pour the berry mixture into the sieve. Using the back of a wooden spoon or spatula, press firmly on the mixture to extract as much juice as possible. Discard the seeds.
- Place gelatin and cold water in a small bowl and let it bloom for 5 minutes. Add the gelatin to the saucepan used for the berries, and heat over low heat, stirring often, until the gelatin dissolves, 1 to 2 minutes. Pour the strained berry juice back into the pan with the gelatin, and cook for an additional 2 to 3 minutes until it just begins to simmer. Remove from heat, and stir in the yogurt until completely smooth and combined. Let the mixture cool to room temperature.
- In a large bowl, beat the cream and vanilla together until the cream holds stiff peaks. Stir ¼ of the whipped cream into the cooled berry mixture, then fold the berry mixture into the remaining whipped cream until smooth and well combined.
- Pour the mousse into serving containers. Cover lightly with plastic wrap and refrigerate until chilled, at least 4 hours or overnight.
