Refresh your palate with this vibrant and tangy Thai Mango Salad!
**Ingredients**:
- 2 green mangoes, julienned
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1/4 cup roasted peanuts, crushed
- 2 green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 1 red chili, thinly sliced (optional)
**Dressing**:
- 3 tbsp lime juice
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1 clove garlic, minced
**Instructions**:
1. In a large bowl, combine the julienned mangoes, red bell pepper, carrot, peanuts, green onions, cilantro, and red chili.
2. In a separate bowl, mix the lime juice, fish sauce, sugar, and minced garlic to make the dressing.
3. Pour the dressing over the salad and toss well to combine.
4. Serve immediately and enjoy the fresh, zesty flavors!
