I recently had the pleasure of making Yemeni Maraq, and it turned out to be an aromatic and comforting dish that truly warms the soul! This traditional stew is a staple in Yemeni cuisine, filled with rich flavors from spices, tender meat, and fresh vegetables. It's perfect for a cozy meal, and the combination of ingredients creates a wonderful depth of flavor. Here’s how you can prepare your own Maraq at home:
Ingredients:
- For the Maraq:
- 2 lbs (900g) lamb or chicken, cut into pieces
- 4 cups water (or as needed)
- 1 large onion, chopped
- 4-5 garlic cloves, minced
- 2 large tomatoes, diced
- 1-2 carrots, sliced
- 1-2 potatoes, diced
- 1-2 green bell peppers, diced
- 1-2 teaspoons ground cumin
- 1-2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1-2 teaspoons ground black pepper
- 1-2 teaspoons chili powder (optional, for heat)
- Salt, to taste
- 2-3 tablespoons vegetable oil
- Fresh cilantro or parsley, for garnish
- Lemon wedges, for serving
Instructions:
1. Brown the Meat:
- In a large pot, heat the vegetable oil over medium-high heat. Add the meat and brown on all sides, about 5-7 minutes. Remove the meat and set it aside.
2. Sauté the Aromatics:
- In the same pot, add the chopped onion and sauté until translucent. Then add the minced garlic and cook for an additional minute until fragrant.
3. Build the Stew:
- Return the browned meat to the pot. Add the diced tomatoes, carrots, potatoes, and green bell peppers.
- Sprinkle in the cumin, coriander, turmeric, black pepper, and chili powder (if using). Stir well to coat everything in the spices.
4. Simmer:
- Pour in the water, enough to cover the meat and vegetables. Bring the mixture to a boil, then reduce the heat to low and let it simmer. Cover and cook for about 1.5 to 2 hours, or until the meat is tender. Check occasionally and add more water if necessary.
5. Season and Garnish:
- Taste and adjust the seasoning with salt and more spices if needed. Once the meat is tender, remove the pot from heat.
- Serve hot, garnished with fresh cilantro or parsley.
6. Serve with:
- Maraq is often served with rice, flatbread, or Yemeni bread (like lavash or tandoor). You can also serve lemon wedges on the side for a refreshing squeeze of flavor.
