  • 200g mussels, cleaned
  • 200g scallops, cleaned
  • 1 small onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup celery, sliced
  • 2-3 Thai bird's eye chilies, finely chopped (adjust to taste)
  • 3-4 cloves garlic, minced
  • 1/4 cup lime juice (about 2-3 limes)
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • Fresh cilantro leaves, for garnish
  • Fresh mint leaves, for garnish
  • Lettuce leaves, for serving (optional)

🍤 Instructions:

  1. Prepare the Seafood:
    • Bring a pot of water to a boil. Add the shrimp, squid, mussels, and scallops. Cook each type of seafood until just done (shrimp turns pink, squid turns opaque, mussels open up, and scallops become opaque), then transfer to an ice bath to stop the cooking process. Drain and set aside.
  2. Prepare the Dressing:
    • In a small bowl, combine finely chopped Thai bird's eye chilies, minced garlic, lime juice, fish sauce, and sugar. Stir until the sugar is dissolved and the mixture is well combined.
