  • 100g glass noodles (bean thread noodles)
  • 200g ground pork or chicken (or tofu for a vegetarian option)
  • 10-12 shrimp, peeled and deveined
  • 1 small carrot, julienned
  • 1 small cucumber, julienned
  • 1 small red onion, thinly sliced
  • 2-3 green onions, chopped
  • 1/2 cup cherry tomatoes, halved
  • Fresh cilantro, chopped
  • Fresh mint leaves, chopped

For the Dressing:​

  • 3 tablespoons lime juice (about 2 limes)
  • 2 tablespoons fish sauce (or soy sauce for a vegetarian option)
  • 1 tablespoon sugar
  • 1-2 Thai bird's eye chilies, finely chopped (adjust to taste)
  • 2 cloves garlic, minced

🍜 Instructions:

  1. Prepare the Noodles:
    • Soak the glass noodles in hot water for about 5-7 minutes or until soft. Drain and rinse under cold water. Cut the noodles into shorter lengths if desired.
  2. Cook the Protein:
    • In a pot of boiling water, cook the ground pork or chicken until fully cooked, breaking it into small pieces. Remove and set aside.
    • In the same pot, cook the shrimp until they turn pink and are cooked through, about 2-3 minutes. Remove and set aside.
  3. Prepare the Dressing:
    • In a small bowl, combine lime juice, fish sauce, sugar, chopped chilies, and minced garlic. Stir until the sugar is dissolved.
  4. Mix the Salad:
    • In a large mixing bowl, combine the cooked glass noodles, ground meat, shrimp, julienned carrot, julienned cucumber, red onion, cherry tomatoes, green onions, cilantro, and mint leaves.
    • Pour the dressing over the salad and toss everything together until well combined.
  5. Serve:
    • Transfer Yum Woon Sen to a serving platter. Garnish with additional fresh herbs if desired.
