- 1/2 cup heavy cream
- 1/4 cup light corn syrup
- 2 tablespoons unsalted butter
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 8 ounces dark chocolate, chopped
- First off, let's get that sweet caramel goodness going! In a saucepan over medium heat, mix together the sugar, heavy cream, and corn syrup until the sugar dissolves completely.
- Once it's all combined, crank up the heat to medium-high and let it bubble away until it reaches a toasty 320°F (160°C) on your candy thermometer. It'll take about 10-12 minutes, but keep an eye on it!
- Off the heat, stir in the butter, vanilla extract, and a pinch of salt. Trust me, that touch of salt is pure magic.
