- 2 medium zucchinis, spiralized into noodles
- 6 eggs
- 1/4 cup milk or cream
- 1/2 cup crumbled goat cheese
- 1/4 cup chopped fresh basil
- Salt and pepper to taste
- Olive oil for cooking
- Preheat your oven to 350°F (175°C).
- Heat some olive oil in a large oven-safe skillet over medium heat.
- Add the zucchini noodles to the skillet and sauté for about 2-3 minutes until they start to soften.
- In a mixing bowl, whisk together the eggs, milk or cream, salt, and pepper.
- Pour the egg mixture over the zucchini noodles in the skillet.
- Sprinkle the crumbled goat cheese and chopped basil evenly over the eggs.
- Cook on the stovetop for 3-4 minutes until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set in the center and golden brown on top.
- Remove from the oven and let it cool slightly before slicing and serving.
