- 1 cup milk (or almond milk)

- 1 tablespoon butter, melted
- 1/4 cup raisins or chopped nuts (optional)

- Preheat Oven:
- Preheat your oven to 350°F (175°C).
- Lightly grease a baking dish or individual ramekins.
- Prepare the Zucchini:
- Peel and grate the zucchinis, then place them in a clean kitchen towel and squeeze out as much moisture as possible.
- Make the Pudding Mixture:
- In a large bowl, whisk together the sugar (or honey), cinnamon, nutmeg, and salt.
- Add the eggs and beat well until the mixture is smooth.
- Stir in the milk, vanilla extract, and melted butter.
- Fold in the grated zucchini and, if using, the raisins or chopped nuts.
- Bake the Pudding:
- Pour the mixture into the prepared baking dish or ramekins.
- Bake for 35-40 minutes, or until the pudding is set and lightly golden on top.
- Let cool slightly before serving.
