- 2 large egg yolks
- 2 tablespoons lukewarm water
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon Dijon mustard
- 1/2 cup unsalted butter (8 tablespoons), cut into small pieces
- 1/4 teaspoon fine sea salt, or more to taste
- 1/8 teaspoon cayenne pepper, or more to taste
- Prepare the Sauce: In a small non-reactive saucepan, whisk together the egg yolks, lukewarm water, fresh lemon juice, and Dijon mustard until well combined.
- Add Butter: Add the pieces of butter to the saucepan with the egg mixture.
- Heat and Whisk: Place the saucepan over medium-low heat. Whisk the mixture constantly as the butter melts. It will become frothy as it heats. Continue whisking for about 3 minutes, or until the sauce thickens enough to coat the back of a spoon. Remove from heat immediately.
- Seasoning: Season the hollandaise sauce with fine sea salt and cayenne pepper, adjusting to taste.
