    A tip for enchiladas...Use a "salamander" grill. If you dont have one (professional chickens have this as a staple) then use the grill function on MAX heat for your oven. Pop it in for 5-10 minutes. Keep an eye on it. That should crispy things up :-)

    Agar agar powder can thicken it. You can also let it reduce further. Remember that this requires low heat and patience. If your heat is too high, the bottom burns. Remember to also frequently stir. The reason why it is too runny is because the liquid has not evaporated yet.

    How long should I boil pasta?

    Yep I second this. Follow the back of the package and minus 2 minutes. When you are making your sauce and it's reduced and ready you pour in your pasta for 2 minutes and then serve piping hot and ready. Remember to save some of your pasta water!

    I personally use milk if it's in a sauce or stew. Potatoes are also an alternative to balance it out and draw away the heat. I might give the sugar thing a try :-)

    You do lower heat, and for longer. You can tenderize the meat even prior to putting it in the big pot. There are powders and ways to tenderize and get it succulent even before cooking. Cooking it just draws out the juices and the flavors making it a great meal for a family
