Ingredients:

  • 1 lb (450g) fresh string beans (sitaw), trimmed and cut into 2-inch pieces
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 medium tomato, chopped
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/2 cup water
  • 1 tablespoon brown sugar or palm sugar
  • 2 bay leaves
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt (to taste)
  • Optional: 1/2 teaspoon chili flakes or 1-2 fresh red chilies, sliced (for heat)

Instructions:

  1. Prepare the Beans:
    • Wash and trim the string beans. Cut them into 2-inch pieces.
  2. Cook the Aromatics:
    • Heat the vegetable oil in a large skillet or pan over medium heat.
    • Add the chopped onion and cook until it becomes translucent, about 2-3 minutes.
    • Add the minced garlic and cook for another 1-2 minutes, or until fragrant.
    • Add the chopped tomato and cook until it starts to break down, about 3-4 minutes.
  3. Add the Beans:
    • Add the string beans to the pan and cook, stirring occasionally, for about 3-4 minutes. This helps the beans to absorb the flavors of the aromatics.
  4. Make the Sauce:
    • In a small bowl, combine the soy sauce, vinegar, water, brown sugar, bay leaves, black pepper, and salt. Stir to mix well.
    • Pour this mixture over the string beans in the pan.
  5. Simmer:
    • Bring the mixture to a boil. Reduce the heat to low and cover the pan.
    • Let it simmer for about 10-15 minutes, or until the string beans are tender and the sauce has slightly thickened. Stir occasionally to ensure the beans cook evenly.
  6. Adjust Seasoning:
    • Taste the dish and adjust the seasoning with additional salt or pepper if needed. If you like some heat, add chili flakes or sliced fresh red chilies at this stage.
  7. Serve:
    • Serve the Adobong Sitaw hot, paired with steamed rice. It makes for a satisfying and flavorful side dish or can be enjoyed as a main vegetarian entrée.

Tips:

  • You can also add other vegetables to the dish, like bell peppers or potatoes, for added texture and flavor.
  • If you prefer a richer sauce, you can add a bit of pork or chicken to the dish, cooking it along with the beans. Just adjust the cooking time accordingly.
Enjoy your Adobong Sitaw! This classic Filipino dish is both comforting and packed with savory goodness.
