Ingredients:
- 1 lb (450g) fresh string beans (sitaw), trimmed and cut into 2-inch pieces
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 medium tomato, chopped
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1/2 cup water
- 1 tablespoon brown sugar or palm sugar
- 2 bay leaves
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon salt (to taste)
- Optional: 1/2 teaspoon chili flakes or 1-2 fresh red chilies, sliced (for heat)
Instructions:
- Prepare the Beans:
- Wash and trim the string beans. Cut them into 2-inch pieces.
- Cook the Aromatics:
- Heat the vegetable oil in a large skillet or pan over medium heat.
- Add the chopped onion and cook until it becomes translucent, about 2-3 minutes.
- Add the minced garlic and cook for another 1-2 minutes, or until fragrant.
- Add the chopped tomato and cook until it starts to break down, about 3-4 minutes.
- Add the Beans:
- Add the string beans to the pan and cook, stirring occasionally, for about 3-4 minutes. This helps the beans to absorb the flavors of the aromatics.
- Make the Sauce:
- In a small bowl, combine the soy sauce, vinegar, water, brown sugar, bay leaves, black pepper, and salt. Stir to mix well.
- Pour this mixture over the string beans in the pan.
- Simmer:
- Bring the mixture to a boil. Reduce the heat to low and cover the pan.
- Let it simmer for about 10-15 minutes, or until the string beans are tender and the sauce has slightly thickened. Stir occasionally to ensure the beans cook evenly.
- Adjust Seasoning:
- Taste the dish and adjust the seasoning with additional salt or pepper if needed. If you like some heat, add chili flakes or sliced fresh red chilies at this stage.
- Serve:
- Serve the Adobong Sitaw hot, paired with steamed rice. It makes for a satisfying and flavorful side dish or can be enjoyed as a main vegetarian entrée.
Tips:
- You can also add other vegetables to the dish, like bell peppers or potatoes, for added texture and flavor.
- If you prefer a richer sauce, you can add a bit of pork or chicken to the dish, cooking it along with the beans. Just adjust the cooking time accordingly.
