  • 1 pound fresh anchovies, cleaned and gutted

  • 1/4 cup water

  1. Prepare the anchovies: Remove the heads and tails of the anchovies. Pat them dry with paper towels.
  2. Make the batter: In a shallow bowl, whisk together the flour, water, salt, and pepper until smooth.
  3. Coat the anchovies: Dip each anchovy in the batter, ensuring it's evenly coated.
  4. Fry the anchovies: Heat the vegetable oil in a deep skillet or pot to 375°F (190°C). Carefully add the coated anchovies to the hot oil and fry for 2-3 minutes or until golden brown and crispy.
  5. Drain and serve: Remove the fried anchovies from the oil and drain on paper towels. Serve immediately while hot and crispy.
