I thought I'd kick off a fun topic and share a recipe that's been a family staple for years – Ambrosia Salad! It's a simple, creamy, and nostalgic dessert that’s perfect for gatherings, holidays, or just because. Here's how I make it:

Ingredients:

  • 1 cup of mini marshmallows (the rainbow ones add a fun touch!)
  • 1 cup of sour cream
  • 1 cup of whipped topping (like Cool Whip)
  • 1 can (20 oz) of pineapple tidbits, drained
  • 1 can (15 oz) of mandarin oranges, drained
  • 1/2 cup of shredded sweetened coconut
  • 1/2 cup of maraschino cherries, halved and drained
  • 1/2 cup of chopped pecans or walnuts (optional, but I love the crunch!)

Directions:

  1. In a large mixing bowl, gently fold together the sour cream and whipped topping until smooth.
  2. Add the drained pineapple, mandarin oranges, and cherries, mixing carefully to avoid breaking them.
  3. Stir in the coconut, nuts (if using), and mini marshmallows.
  4. Cover and refrigerate for at least 2 hours (overnight is even better) to let the flavors meld together.
  5. Serve chilled and enjoy the creamy, fruity goodness!

This Ambrosia Salad sounds amazing! I love how simple and creamy it is. I sometimes swap the sour cream for Greek yogurt for a tangy twist and add in some chopped apples or grapes for extra crunch. I also like to use toasted coconut instead of shredded for a bit more texture. It's such a versatile recipe!
