I thought I'd kick off a fun topic and share a recipe that's been a family staple for years – Ambrosia Salad! It's a simple, creamy, and nostalgic dessert that’s perfect for gatherings, holidays, or just because. Here's how I make it:

Ingredients:
- 1 cup of mini marshmallows (the rainbow ones add a fun touch!)
- 1 cup of sour cream
- 1 cup of whipped topping (like Cool Whip)
- 1 can (20 oz) of pineapple tidbits, drained
- 1 can (15 oz) of mandarin oranges, drained
- 1/2 cup of shredded sweetened coconut
- 1/2 cup of maraschino cherries, halved and drained
- 1/2 cup of chopped pecans or walnuts (optional, but I love the crunch!)
Directions:
- In a large mixing bowl, gently fold together the sour cream and whipped topping until smooth.
- Add the drained pineapple, mandarin oranges, and cherries, mixing carefully to avoid breaking them.
- Stir in the coconut, nuts (if using), and mini marshmallows.
- Cover and refrigerate for at least 2 hours (overnight is even better) to let the flavors meld together.
- Serve chilled and enjoy the creamy, fruity goodness!
