Enjoy a comforting bowl of Ankake Yaki Udon, a thickened stir-fried udon dish with a savory, rich sauce!
**Ingredients**:
- 200g udon noodles (fresh or frozen)
- 200g chicken breast or pork, thinly sliced
- 1 cup cabbage, shredded
- 1/2 cup shiitake mushrooms, sliced
- 1/2 cup carrots, julienned
- 2 cloves garlic, minced
- 2 tbsp vegetable oil
**For the Sauce**:
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp mirin
- 1 tbsp sugar
- 1 cup chicken or vegetable broth
- 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
**Instructions**:
1. **Cook the Udon Noodles**:
- If using fresh udon noodles, cook according to package instructions. If using frozen, thaw and rinse under warm water. Drain and set aside.
2. **Prepare the Sauce**:
- In a small bowl, mix soy sauce, oyster sauce, mirin, sugar, and chicken or vegetable broth. Set aside.
3. **Stir-Fry**:
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add minced garlic and stir-fry until fragrant.
- Add sliced chicken or pork and cook until fully cooked and browned.
- Add shredded cabbage, sliced shiitake mushrooms, and julienned carrots. Stir-fry until vegetables are tender-crisp.
4. **Add Sauce and Noodles**:
- Pour the prepared sauce over the meat and vegetables. Stir to combine.
- Bring the sauce to a simmer, then add the cornstarch mixture. Stir until the sauce thickens.
