- 200g udon noodles
- 1/4 cup miso paste (white or red)
- 2 cups chicken or vegetable broth
- 1 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp vegetable oil
- 1/2 cup sliced mushrooms
- 1/2 cup sliced green onions
- 1/2 cup spinach or bok choy (optional)
