Any ideas why my crustless quiche keeps collapsing?

🥚 I've tried making crustless quiche a few times, but it always ends up deflating and collapsing in the middle. Not sure what I'm doing wrong! Any tips or insights on how to prevent this mishap would be greatly appreciated! 🙏
