I recently made Armenian Khorovats, and it was an unforgettable feast! This traditional Armenian barbecue is all about smoky, tender meats and vibrant vegetables cooked over open flames. The simplicity of the ingredients allows the natural flavors to shine, making it a favorite for gatherings and celebrations. Here's how you can recreate this iconic dish at home.

Ingredients:​

For the Meat:​

  • 2 lbs pork (or lamb/beef), cut into large chunks
  • 2 medium onions, finely grated
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • Juice of 1 lemon

  • 1 teaspoon salt

For the Vegetables:​

  • 3 bell peppers
  • 2 medium tomatoes
  • 2 medium eggplants
  • 2 medium onions (optional, peeled and halved)

For Serving:​

  • Lavash bread (or any flatbread)
  • Fresh herbs like parsley, cilantro, or basil
  • Lemon wedges
  • Optional: Pickled vegetables

Instructions:​

1. Marinate the Meat:​

  • In a large bowl, mix grated onion, garlic, olive oil, lemon juice, paprika, black pepper, and salt.
  • Add the meat chunks and coat them well in the marinade. Cover and let it sit in the fridge for at least 2 hours (overnight is even better).

2. Prepare the Vegetables:​

  • Keep the vegetables whole or halved, depending on size. Lightly brush them with olive oil and sprinkle with a pinch of salt.

3. Grill the Meat and Vegetables:​

  • Preheat your grill or barbecue to medium-high heat.
  • Thread the meat onto skewers, leaving some space between each piece for even cooking.
  • Grill the skewers, turning occasionally, until the meat is cooked through and has a nice char, about 10-15 minutes depending on the size of the pieces.
  • Simultaneously, place the whole or halved vegetables on the grill. Cook until they’re charred and softened, turning occasionally.

4. Assemble and Serve:​

  • Once cooked, remove the vegetables from the grill and peel off any charred skins (optional).
  • Serve the grilled meat and vegetables with lavash bread, fresh herbs, and lemon wedges.
  • Wrap the meat and veggies in lavash for an authentic Khorovats experience!
