- 4 chicken thighs (bone-in, skin-on)
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 bell pepper, chopped (any color you like)
- 1 cup long-grain rice
- 1 can (14.5 ounces) diced tomatoes (with juice)
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1 bay leaf
- Salt and pepper to taste
- 1 cup frozen peas
- Fresh cilantro for garnish (optional)
- In a large skillet or pot, heat the olive oil over medium heat. Add the chicken thighs, season with salt and pepper, and cook until they are golden brown on both sides (about 5-7 minutes each). Remove the chicken and set it aside.
- In the same pot, add the chopped onion, garlic, and bell pepper. Sauté until they’re soft and fragrant (about 5 minutes).
- Stir in the rice and cook for another minute until it’s slightly toasted.
- Add the diced tomatoes, chicken broth, cumin, paprika, turmeric, bay leaf, and the browned chicken thighs back into the pot. Give it a good stir.
- Bring everything to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, or until the rice is cooked and has absorbed the liquid.
- In the last 5 minutes of cooking, stir in the frozen peas and let them heat through.
- Once everything is cooked, remove the bay leaf. Fluff the rice with a fork, garnish with fresh cilantro if you like, and serve it warm.
